Ezo Bride Soup
- Heat the 1/2 stick butter in a saucepan and fry the onion.
- Pour in the chicken stock and bring to a boil.
- Add the bulgur wheat, red lentils, and tomato paste.
- Taste and adjust the seasoning if necessary
- Just before serving, melt a teaspoon of butter in a skillet, stir in the paprika, and then pour over the soup.
Bulgur Wheat Salad
- Place the bulgur wheat in a bowl and cover with boiling water. Soak for 5 minutes, or until the water is absorbed.
- Stir in the tomato paste. When thoroughly mixed, add the scallions and herbs
- Pour over the lemon juice, taste, and season with salt and pepper. Serve garnished with the torn lettuce leaves.
